Authentic Bacolod Kansi

🌍 Filipino

Kansi is an iconic Filipino recipe that combines the best of bulalo and sinigang with green jackfruit and a signature sour flavor. Using Mama Sita's Sinigang Mix makes it super easy to recreate this rich, comforting soup with tender beef and rich bone marrow at home.

📍 Bacolod · Philippines

The story of the dish

Kansi originated in Bacolod, Negros Occidental, as a sour broth dish combining traditional Filipino sour soups with local beef shank and tamarind. It evolved from the broader Filipino kansi tradition, where beef shank with bone marrow simmers in a tamarind-based broth, often enjoyed as a comforting main dish with rice.

The name: Kansi means 'sour' in Cebuano, reflecting the dish's characteristic tangy broth

👨‍🍳 Chef’s tips
  • Do not use red onion, use yellow or white onion.
  • Buy green jackfruit for cooking; do not buy yellow jackfruit as it is for dessert.
  • Washing the boiled beef removes impurities to produce a super clear stock.
  • Mama Sita's Sinigang Mix (tamarind version) is used to replace the sourness and bitterness of batwan fruit.
