The story of the dish

Sopas is the Filipino comfort soup for rainy days and sick days, born from Spanish and American influences: macaroni, evaporated milk and hot dogs.

The name: Sopas simply means 'soup', from the Spanish sopa.

Method

Poach the chicken in the broth, then shred it and keep the broth.
Sauté garlic and onion in butter, add the hot dogs and carrot.
Pour in the broth and bring to a boil; add the macaroni.
Cook until the pasta is just al dente, then add the chicken and cabbage.
Stir in the evaporated milk off the boil, season with fish sauce and pepper.
Serve hot; add a splash of broth if it thickens.
