📍 Philippines

The story of the dish

The Creamy Sipo Egg is a Filipino dish that originated in the Philippines, likely influenced by Spanish colonial-era cuisine. It combines Chinese ingredients such as quail eggs and pork with Western dairy elements like whipping cream, reflecting the country's mixed culinary heritage. The dish is typically enjoyed as a main course or pulutan (snack) paired with steamed rice or bread.

The name: "Sipo" means "to scramble" in Filipino/Tagalog, referring to the scrambled egg component of the dish

Method

  1. Boil the eggs for 3 minutes in the water and put them in a bath of ice. Ensure eggs are at room temperature.
  2. Start with our butter. Add little bit of oil so it will not get burned.
  3. Put the head of the shrimp just to get some of the flavor.
  4. Add the shrimp, and once it's brown, set aside.
  5. Sauté our onion and garlic.
  6. After the onion and garlic is brown, put our vegetable and add a ginisa mix.
  7. Add our mushroom, add little bit of water, cover, and steam, taking about 10 minutes total.
  8. Add our cream, and add little bit of allpurpose cream to make it thick.
  9. Add the cooked eggs on the last.
👨‍🍳 Chef’s tips
  • The more buttery it is, the better.
  • Add little bit of oil to the butter so it will not get burned.
  • Put the head of the shrimp just to get some of the flavor.
  • Remember that ginisa means sauté.
  • Don't want to overcook the vegetable.
  • Since the eggs are cooked already, of course, it's going to be on the last.
